There are countless ingredients that define the dining experience at Sushi Noz, many of which make their appearance before any food is served. The decor, lighting, aromas, ceramics, flower arrangements, and more, set the stage for Chef Noz to transport his guests to a distant time and place through Edomae cuisine.
Many of these elements were passed down within Chef Noz's family, or are antiques that have been acquired on sourcing trips to Japan over a span of several decades. Some, however, remain in production in Japan, previously unavailable to American retail consumers. More, still, are not necessarily an individual object, but an embodiment of a feeling or sense.
We are excited to bring these objects to Noz Honten, and allow our guests to bring a small piece of Sushi Noz into their own home. All of our items are made in small runs in collaboration skilled artisans, in the interest of preserving the tradition of fine craftsmanship that is integral to the Sushi Noz ethos.
